Cooking for sick Gibson

Gibson is sick. Doctor said it looks more likely a viral infection, that causes the runny nose, the cough with phlegm and the fever. Although Gibson mentioned 'throat pain pain' doctor says the throat aren't swelling (I sigh relieve). 

I still do pretty much believe in the chinese 'heaty' believe. Gibson could maybe got too 'heaty' from the generous varieties of snack I shower him with. 

Green beans are believe to be very 'cooling' and not recommended for weak ladies or ladies in the 'time of the month' to consume in large amount. I remembered my mom saying green beans and barley soup are good for fever. If you don't like green beans simply drink the soup it works the same. :)


GREEN BEANS AND BARLEY SOUP
Ingredients
  • 140g Green beans, washed and drained
  • 70g Pearl Barley, washed and drained
  • 3 pandan leaves
  • 1500ml -1700ml water
  • Rock sugar to taste

Method
  1. Bring water to boil, I used 1700ml. Put in green beans and, barley and bring to boil again.
  2. Once boiling, lower the heat and simmer for 40mins or until green bean softs or 'open'.
  3. Put in pandan leaves and continue to simmer for 10mins. (not too long or the pandan may cause bitterness)
  4. Remove the pandan leaves and add rock sugar to your preferred sweetness.
  5. Off the heat, serve warm.
Serve about 5-6pax






I like to use pearl barley shown in the photos above, you can get it at any major supermarkets. I usually wash the barley with tap till water runs clear, usually about 4 washes. 

Another, receipe that we commonly see when we fall sick is Mee Suah Soup. Gibson, like me, does not fancy porridge. What else can he eat other then porridge since he is a sick boy now? It is non other but the Mee Suah Soup. It is one of his comfort food and I believe it is most too, because of its salty taste.

I cooked this in a hurry therefore I did not note down the measurements. I will just put down the ingredients I used and you gauge the amount depending on the quantity you need. :p This dish is great for sick and when you don't have appetite. Of course is it great for any other days too! Oh and traditionally, chinese has to eat Mee Suah on their Birthday with hard boiled eggs! It is how flexible this dish is, you can just throw in and ingredients you have in your fridge!



Mee Suah Soup

Ingredients:
  • Ikan Bilis
  • Dried scallops
  • Mee Suah
  • Water
  • Button mushrooms, sliced
  • Fish cake, sliced
  • Carrot, sliced
  • Broccoli, cut into bite size
  • Minced lean pork
  • Cornflour
  • Soy Sauce
  • Oyster Sauce
  • Dash of pepper
  • Seasame oil
  • Salt to taste (optional)
  • Chives Oil (optional)
  • Spring Onions for garnishing (optional)

Methods
  1. Marinate minced pork with cornflour, soy sauce, oyster sauce, sesame oil and dash of pepper. Set aside.
  2. Bring the water to boil in a pot, put in ikan bilis, dried scallops and continue to boil on lower heat for at least 30mins. (longer taste better but watch the level of water in the pot)
  3. Once soup is done discard the ikan bilis but keep the dried scallops if you want to eat them.
  4. Put in broccoli, carrots, button mushrooms and fish cake and boil for another 3mins.
  5. Scoop the minced meat into small chunks and drop it into the soup. When meat turns white (pretty fast) , put in the mee suah and continue to boil until mee suah soften and broccoli softens.
  6. Add salt and chives oil if you want it tastier.
  7. Transfer to bowl and sprinkle some spring onions.
  8. Serve hot.

Other Common ingredients used.
Thinly Fried eggs cut into strips, hard boiled eggs, bak choy, chai sim, cabbage, onions, chicken fillet diced, shitake mushrooms, etc etc...

If this is to be my lunch I will put in crabsticks and luncheon meat! My loves... yumms

Fish & Spinach Patties

Another recipe from Food-4tots.

Ever since I became Temp SAHM, I started cooking dinner everyday. Of course, a noob cook like me need to crack my brain everyday to think of the menu for that evening. Whenever I ran out of ideas I like to visit Food-4tots, she has lot of simple dishes great for the tots! I love to try her recipe. Most of the recipes are easy and turns out pretty decent. At least, my supporter aka Gibson likes it. :p (By the way she is not my friend and I'm not advertising too. I came across her webby when I did a search on Google for Food for Toddlers! ;))

I am not very good at churning cooking ideas for fish. I usually pan fry them and add them with my 'signature' sauce (a grandma recipe) or I will just steam them if it is fresh from market. This recipe I found is great. It is a whole new way for me to cook fish and also to introduce vegetable to my Hubby! Yes, my hubby not my son.

I added spring onions to the recipe to add some fragrance and flavour to the patties. My son and Hubby love it! However, I find it too salty to munch on its own. I will reduce the salt to ½ tsp instead of 1 tsp which the recipe calls for.

Salmon & Cucumber Onigiri

Was reading one of my fave blog http://food-4tots.com/ and I came across this recipe she posted.

Immediately I thought "Eh I can have a Onigiri making session with Gibson!" (since I already got the mould and japanese rice at home). So I went to the supermarket to get salmon and japanese cucumber, and that night we had Onigiri for dinner. (:

The onigiri did not turn out as I expected. It does not stick together well. Not sure if it is because the recipe call for japanese rice and not sushi rice? Anyway, lazy is me, I did not cut the ingredients small enough too. hee... oh I added my fave CRAB STICKS! (((:

Need to 'Catch' Up

I have so much in mind that I wanted to blog about but Mr Procrastinate is just too influential. :p

I have overcome the urge to procrastinate today to complete this super long post.

Weddings and birthdays make me feels bliss but at the same time it hints me signs of aging. 3 of my buds got hitch this year, which means I got a big burnt pocket! I have blogged about one the the wedding and to be fair I'm blogging the other 2 now. ;)

Chiri got Hitched! 
Lol I love being 'sister' for my buds. It is the only chance where we are able to sabotage the MALES! The brothers are rather sporting as you can see from one of the 'kissing' photo! Ewww... *Evil*


They are such a fun couple and KC is such a nice fella. Glad Chiri found the right man!


Hubby and Gibby joined us for the dinner banquet. Phew it's a busy night for me, but I'm so happy to be able to be a KPO. Hee Hope I have not been too 38 for KC and Chiri! Congrats!

It is a simple Solemnisation Party but it ROCKS big time!!! The venue has superb view! Great sun that day and accompanied by great BEER! You go Gal!


I totally enjoyed myself that day though the hotel service sucks big time. Anyway the small hiccups are nothing compared to the great company and the great party! I love photos I took of the couple! They are just so unique. ;)

All I can say is HIGH HIGH HIGH!!!! I hope they had fun and it definitely marks a very memorable day for me too! Congrats!!! 

Taking a break
If you have been following me on Twitter and on Facebook, you will have known I have made the decision to stop work. My days at my ex company, also the only company I have joined since I joined the workforce in 2004. Good and bad times of 6 years has passed at a blink of eye. Sometimes I really wonder if I have made the right decision, am I being too impulsive? 

I have friends telling me, "whoa I have changed 3 companies and you are still at the first company? When are you going to move on?" At first, I was wondering "What's wrong with staying at one company?" but slowly I got to realise what she exclaimed is so true. I will never get to learn and experience what is it like in the "outside" world. I will never grow (in terms of experience and monetary too). I do believe that I am one of the lowest paid amongst my friends now, although we might all have started the same or equivalent.

6 years of hiding in my comfort zone have finally come to an end. I have decided to give myself a break from the becoming 'ugly' company, from the company that accept me as a greenhorn, from the company that has tolerated my misconduct (sometimes), from the company that has sought to train and develop me. I will, of course, not be a permanent SAHM. I am typing my resume (again) now and flipping the papers to see what interest me. Typing resume puts me in reflections again, scope of work ... what have I been doing all these 6 years? My scope has been sooooo GENERAL sooo insignificant so unfit to be labelled as experience. Why have I allowed myself to slip into such a disadvantage situation? 

Nevertheless, I still need to get a full time job somehow. Few weeks of staying at home makes me feel dumb already. I need to earn my own living and to feel independent and witted. You may think I am a too strong character, whatever, I just like the power of able to control and not being controlled. So friends out there! If you have any job that you think that suits me please give me a buzz! TIA!

Oh and I was so close to being called thief! They thought I have been keeping one of the company SLR! #$^#* so ridiculous. I am so tempted to sure them for erm... defamation? %#&&^*( All vulgarities have to come out. %#$&&^*^&(

Gibson goes School
We have finally enrolled Gibson to a full day childcare. His first day of school was great! He totally enjoyed it and did not even cry for me! However, the anxiety came on the third day of school and lasted for almost 2 weeks. :(

He started crying the moment he sees his uniform. He told me he does not want to go to school and asked where is Ah Ma and Wati (I lied that both of them went work). I was exasperated, my mind just went blank when I see him cried and wail so badly. He is not a boy who loves to cry. I will treated him with sweets, chocolates and many other goodies that he likes to hoax him into putting his uniform on. I gave him promises to bring him to beach, buy him Mac Donalds if he goes school and behaves. I put in plenty of efforts to explain to him about going to school and shows him whoever passes by that where uniforms are going to school as well. Slowly, he stops resisting and now more than a month schooling, he loves school. :)

He learns alot in school. He sings new songs and 'perform' them whenever where ever he got chance, before sleeps, bath time and while I am driving etc. What impresses me most is that he picks up chinese real fast! His social skills does increases alot too. He is certainly happy schooling now. One day after I fetched him from school he told me " I Love Globalkids" (:
