Recent Snaps

Been real busy these days... I'm officially back to a FTWM now. It did not came as a surprise offer to me but the decision to join them was sudden (I'm almost left with no choice). Hee... Why is that so? Hint: during the day, hubby is my immediate superior. Got it?

Well, Gibson has grown alot these months. He is now able speak more fluently and has become more independent. He goes toilet on his own now at home (without even need to call out to me). When I say goes toilet I mean both big and small business. :)

Healthy dinner

I decided to go healthy today since we had kong ba for yesterday's dinner. So I used only steam and boil method to dish up our dinner!

It turns out pretty good! All wiped out! Plus, it's easy, fast and hassle (oily hassles) free!



Looks boring here but they are pretty tasty wor. I'm a born chef. Wahaha



Steam egg (chawanmushi style) with mushrooms & crab sticks



Steam meat cake (I steam it with rice cooker while cooking rice, save time!)



Blanch bak choy with mushroom and oyster sauce.



Cabbage and tofu soup. Light but tasty as I used ikan bilis broth. Ikan bilis is the fastest broth to cook! Not ayam brand stock cubes of course! For 2-3 pax just need a handful of ikan bilis, boil with ~2l of water for 30mins! Tt easy!

Happy Anniversary!

Dang dang dang dang! 4yrs pass in a flash! Or I more appropriately 5yrs (legally).

I wanted to write our love story! But is just not right to create a wordy post with my iPhone.

Yes, my pc is not usable now, the monitor broke down without notice!!! It just decided to stop working! Argh anyway I manage to find a super super old monitor to use temporaily. Ok, I thought since this pc is rather old too I might just use a lousy monitor now till it breakdown and I can buy a new iMac! So saving the pennies now. Lol

I have many outdated photos waiting for me to post and they are all in the pc! Ok I shall find one day to make way on my desk for the HUGE ASS monitor. :p

Gibson is 3!

We brought him to Night Safari on his birthday. I was deciding between the Flyers or Night Safari and of course Night Safari since Gibson loves animals! He calls it the jungle. It is a weekday night but to our surprise is it packed with tourist! The weather is not to our favour that night, air is still and warm and humid... Did not take many photos as it is almost pitch black in there and no flash photography. PLUS the so call nocturnal animals are sleeping, so nothing much to take.

I enjoyed the Masala Iced Tea and Indian Curry Rice though. :) And the concept of the restuarant is pretty interesting.

Since his birthday was spent in Night Safari, we had his cake cutting on the next day. :) Erm... I tried my best to bake a nice cake for him but it turns out pretty BAD! haha I really mean BAD! I find myself really bad at baking! Maybe I should forget about baking totally. I tried baking a pandan chiffon cake with pre mix... also FAILED! Even premixes fail can! tsk tsk... Although it could be because I did not use the specified oil but I'm always disappointed with my bakes. duh.

Labour Day

Ok I know I know this post is slow. Better to be slow then nothing right?

Labour Day, same every year, we will spent with Hubby's company. This year they went for BBQ at Changi Beach. And you know what? I have not visited Changi Beach before! (well at least not within my recollection)

Gibson definitely enjoyed himself as he loves beach! He loves to bug for a beach outing, so although he just recovered from his fever we brought him there. We brought back with us a nice tan! (erm and some burnt hee)

Cooking for sick Gibson

Gibson is sick. Doctor said it looks more likely a viral infection, that causes the runny nose, the cough with phlegm and the fever. Although Gibson mentioned 'throat pain pain' doctor says the throat aren't swelling (I sigh relieve). 

I still do pretty much believe in the chinese 'heaty' believe. Gibson could maybe got too 'heaty' from the generous varieties of snack I shower him with. 

Green beans are believe to be very 'cooling' and not recommended for weak ladies or ladies in the 'time of the month' to consume in large amount. I remembered my mom saying green beans and barley soup are good for fever. If you don't like green beans simply drink the soup it works the same. :)


GREEN BEANS AND BARLEY SOUP
Ingredients
  • 140g Green beans, washed and drained
  • 70g Pearl Barley, washed and drained
  • 3 pandan leaves
  • 1500ml -1700ml water
  • Rock sugar to taste

Method
  1. Bring water to boil, I used 1700ml. Put in green beans and, barley and bring to boil again.
  2. Once boiling, lower the heat and simmer for 40mins or until green bean softs or 'open'.
  3. Put in pandan leaves and continue to simmer for 10mins. (not too long or the pandan may cause bitterness)
  4. Remove the pandan leaves and add rock sugar to your preferred sweetness.
  5. Off the heat, serve warm.
Serve about 5-6pax






I like to use pearl barley shown in the photos above, you can get it at any major supermarkets. I usually wash the barley with tap till water runs clear, usually about 4 washes. 

Another, receipe that we commonly see when we fall sick is Mee Suah Soup. Gibson, like me, does not fancy porridge. What else can he eat other then porridge since he is a sick boy now? It is non other but the Mee Suah Soup. It is one of his comfort food and I believe it is most too, because of its salty taste.

I cooked this in a hurry therefore I did not note down the measurements. I will just put down the ingredients I used and you gauge the amount depending on the quantity you need. :p This dish is great for sick and when you don't have appetite. Of course is it great for any other days too! Oh and traditionally, chinese has to eat Mee Suah on their Birthday with hard boiled eggs! It is how flexible this dish is, you can just throw in and ingredients you have in your fridge!



Mee Suah Soup

Ingredients:
  • Ikan Bilis
  • Dried scallops
  • Mee Suah
  • Water
  • Button mushrooms, sliced
  • Fish cake, sliced
  • Carrot, sliced
  • Broccoli, cut into bite size
  • Minced lean pork
  • Cornflour
  • Soy Sauce
  • Oyster Sauce
  • Dash of pepper
  • Seasame oil
  • Salt to taste (optional)
  • Chives Oil (optional)
  • Spring Onions for garnishing (optional)

Methods
  1. Marinate minced pork with cornflour, soy sauce, oyster sauce, sesame oil and dash of pepper. Set aside.
  2. Bring the water to boil in a pot, put in ikan bilis, dried scallops and continue to boil on lower heat for at least 30mins. (longer taste better but watch the level of water in the pot)
  3. Once soup is done discard the ikan bilis but keep the dried scallops if you want to eat them.
  4. Put in broccoli, carrots, button mushrooms and fish cake and boil for another 3mins.
  5. Scoop the minced meat into small chunks and drop it into the soup. When meat turns white (pretty fast) , put in the mee suah and continue to boil until mee suah soften and broccoli softens.
  6. Add salt and chives oil if you want it tastier.
  7. Transfer to bowl and sprinkle some spring onions.
  8. Serve hot.

Other Common ingredients used.
Thinly Fried eggs cut into strips, hard boiled eggs, bak choy, chai sim, cabbage, onions, chicken fillet diced, shitake mushrooms, etc etc...

If this is to be my lunch I will put in crabsticks and luncheon meat! My loves... yumms
